Winemaking: Light extraction with direct pneumatic press. Low temperature fermentation, stopped before dry to conserve 10 grams of residual sugar. Short aging on fine lees and bottled early to retain freshness of the wine.
Packaging: Available in 75cl bottles.
Tasting: This is a small, reserve production made from 100% Viognier. The wine is pale gold and limpid. The body is rich with a fresh and fruity nose dominated by flavors of peach and apricots as well as some citrus and lemon nuances. The wine has a fresh acidity. Fermentation was stopped to offer a medium-sweet wine with 10 grams of residual sugar. On the palate the fruit aromas are concentrated and match the nose; hints of honeysuckle and violets create complexity. The sweetness and crispness integrate perfectly to create harmony in the mouth.
Accompaniments and service: To be served chilled. We strongly recommend it chilled with “Foie Gras” or smoked salmon. Also to be enjoyed on its own with friends.
